Different genetics. Different places. Different flavors.

Just like apples and grapes, cacao comes in many varieties—each with its own flavors, aromas, and character.

how cacao varieties evolved

ancient genetic groups

Modern DNA research has identified 10 major genetic groups that explain most of cacao’s natural diversity—the genetic foundation from which every cacao variety descends.

The 10 genetic groups are:

    * Amelonado

    * Contamana

    * Criollo

    * Curaray

    * Guiana

    * Iquitos

    * Marañón

    * Nacional

    * Nanay

    * Purús

Think of these as the wild ancestors of today’s cacao.

landraces & Heirlooms

Over hundreds of years, cacao growing in a particular region naturally adapted to its climate, soils, and farming traditions. These locally adapted populations are called landraces or heirloom varieties and contain genetics from several of the ancient groups. Humans didn't make these, nature did.

Examples:

    * Piura Blanca

    * Chuncho

    * Bolivian Heirloom

    * Nicalizo

Think of these like heirloom tomatoes or family wine vinyards.

hybrids & modern cultivars

Cacaos created through natural crossing, intentional breeding, or careful selection for traits such as flavor, productivity, or disease resistance.

Examples:

 Natural Hybrid

    * Trinitario

Modern (man made)

    * CCN-51

    * ICS series

    * IMC series

    * CATIE selections

Think of these like newer tomato or apple cultivars developed for specific traits.

Pod illustrations are reasonably accurate. Actual pod appearance varies within each population, variety, and growing region.
